I accidentally set a hot pan on my laminate countertop and it left a big burn. Is there anything I can do to fix it or cover it up besides buying a new countertop? Any advice is appreciated.

Unfortunately, there's no salvaging burned laminate. Even more, it'd be difficult to find a piece of the same laminate even if you were able to remove the burned piece, which is sometimes possible with the right solvent.
Why not take burned area – have a carpenter take it out – and install a cutting board on that countertop, or tile that can serve as hot plate? The fun thing is, friends will see and ask where you got it, and will have no idea it came from a kitchen accident!
