The skylight in my kitchen ceiling condensates in the winter, dripping water down the drywall and wrecking the paint around the opening of the skylight. My best solution is to seal off room air from reaching the skylight with a plastic sheet. May not look very nice. Suggestions?

Condensation which forms on the indoor glass surfaces of windows and skylights happens when the glass is not well insulated. This is common with poor quality windows and skylights that have lost the seals around their insulated glass. As such, when it gets cold, the warm air inside your home rises up, cools when it strikes the glass and forms condensation which then drips down and potentially damages whatever is below.
The best solution is to replace the skylight with one that is up to modern energy efficiency standards (insulated glass, low-e coating, etc.). Anything else is just prolonging the inevitable!
